Mozzarella Corn Bread Panini
You may have enjoyed something similar to this recipe at a carnival or a fair. They're really easy to make at home too. This recipe makes a great lunch served with a hot bowl of soup.
INGREDIENTS | SERVES 1
- 3 slices mozzarella cheese (or ⅓ cup shredded cheese)
- 2 slices corn bread
Preheat panini press to medium heat setting.
Place mozzarella cheese on 1 slice of corn bread.
Top panini with another slice of corn bread.
Place on panini press, close lid, and cook for 3–5 minutes.
Remove from press, slice in half, and serve.
Arepa
Arepa is a popular Columbian dish made from unleavened cornmeal that's formed into a round patty and grilled like a pancake. It is usually stuffed with cheese, meat, eggs, or seafood. Many arepa recipes can be made with a panini press using corn bread or corn pancakes as a substitute. Or if you can find arepa corn meal in a store near you, why not try making them from scratch? The taste will be worth the effort.
