Vanilla Maple Rice Pudding
Yields 4 cups
INGREDIENTS:
1 cup Arborio rice
4 cups milk (dairy or soy)
½ cup maple syrup
2 tablespoons vanilla
Serve a scoop of this pudding warmed with some blueberries on the side.
Preheat oven to 325°F.
Rinse rice.
In a small saucepan, bring milk, syrup, and vanilla to a boil.
Combine liquid and rice in a covered 2-quart casserole dish.
Bake 1 hour.
Vanilla beans come from a member of the orchid family. This plant originated in Mexico, but is widely grown throughout the tropics, especially in Madagascar. The beautiful flavor and aroma of the vanilla bean is used in baked goods, confections, and perfumes around the world.
