Turkey Cheese Roll-Ups

Pack these in picnic lunches or for daycare. Children love to pull apart wraps and sandwiches and eat all the components separately. Playing with food is a great way for children to explore and accept new tastes and textures.

INGREDIENTS | YIELDS 12 small wraps

  • 4 whole-wheat or sundried tortillas
  • ½ cup of vegetable cream cheese (dairy or soy)
  • 12 ounces nitrate-free, oven-roasted turkey, sliced
  • 2 cups red cabbage, shredded
  • 1 cucumber, sliced
  • 2 carrots, shredded
  • Rice wine vinegar
  1. Spread out the tortillas.

  2. Spread 2 tablespoons of vegetable cream cheese and over each tortilla.

  3. Top with 3 ounces of turkey, ½ cup shredded cabbage, slices of cucumber, and shredded carrots.

  4. Sprinkle with rice wine vinegar to taste.

  5. Roll up tortilla and slice across each tortilla to make 3 smaller wraps.
