Tofu Scramble
Yields 2½ cups
INGREDIENTS:
1 tablespoon olive oil
1 garlic clove, minced
½ cup minced onion
1 cup chopped spinach
15 ounces extra-firm tofu
1 tablespoon soy sauce
To make this quick entrée even more convenient, use thawed frozen chopped spinach.
In a large skillet or sauté pan, heat olive oil over medium–high heat.
Sauté garlic and onion until soft, golden and fragrant.
Add spinach and sauté until wilted.
Crumble tofu and add to skillet.
Add soy sauce.
Cook over medium–high heat until heated through, approximately 7 minutes.
