Tofu Scramble

Yields 2½ cups

INGREDIENTS:

1 tablespoon olive oil

1 garlic clove, minced

½ cup minced onion

1 cup chopped spinach

15 ounces extra-firm tofu

1 tablespoon soy sauce

To make this quick entrée even more convenient, use thawed frozen chopped spinach.

  • In a large skillet or sauté pan, heat olive oil over medium–high heat.

  • Sauté garlic and onion until soft, golden and fragrant.

  • Add spinach and sauté until wilted.

  • Crumble tofu and add to skillet.

  • Add soy sauce.

  • Cook over medium–high heat until heated through, approximately 7 minutes.
