Roasted Red Pepper Hummus

Yields 2¼ cups

INGREDIENTS:

2 cups cooked garbanzo beans (homemade or canned)

1 tablespoon tahini

¼ cup roasted red peppers

2 teaspoons lemon juice

3 tablespoons olive oil

1 clove garlic

¼ teaspoon cumin

⅛ teaspoon salt

Using jarred red peppers adds vitamin C and convenience.

  • If using canned garbanzo beans, drain and rinse beans.

  • Combine all ingredients in a food processor or blender.

  • Process until smooth.

How to Roast a Red Pepper

An easy way to roast a red pepper is to broil a whole red pepper until the skin starts to blister and blacken, approximately 5 minutes. Remove pepper from the oven and place in a closed paper bag, until the skin loosens from the pepper (approximately 5 minutes). Remove pepper from the bag, then remove the skin by sliding it from the pepper with either your fingers or a knife. Slice and remove seeds and membranes.
