Oatmeal Cookies

Change the flavor of these cookies by adding either 1 cup of chopped apples or 1 cup of chocolate chips to the batter before baking.

INGREDIENTS | YIELDS 48 cookies

  • 1½ cups white whole-wheat flour
  • 1½ cups rolled oats
  • ½ teaspoon cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup applesauce
  • ½ cup apple juice concentrate
  • ½ cup maple syrup
  • ½ cup canola oil
  1. Preheat oven to 350°F.

  2. In a medium bowl, combine flour, oats, cinnamon, baking soda, and salt.

  3. In a large bowl, combine applesauce and baking powder.

  4. Add apple juice concentrate, maple syrup, and canola oil to the applesauce mixture.

  5. Slowly add dry ingredients to wet; stirring to combine.

  6. Drop batter by heaping teaspoonfuls onto ungreased cookie sheets.

  7. Bake 10–12 minutes, until golden brown.
