Change the flavor of these cookies by adding either 1 cup of chopped apples or 1 cup of chocolate chips to the batter before baking.
INGREDIENTS | YIELDS 48 cookies
- 1½ cups white whole-wheat flour
- 1½ cups rolled oats
- ½ teaspoon cinnamon
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon baking powder
- ½ cup applesauce
- ½ cup apple juice concentrate
- ½ cup maple syrup
- ½ cup canola oil
Preheat oven to 350°F.
In a medium bowl, combine flour, oats, cinnamon, baking soda, and salt.
In a large bowl, combine applesauce and baking powder.
Add apple juice concentrate, maple syrup, and canola oil to the applesauce mixture.
Slowly add dry ingredients to wet; stirring to combine.
Drop batter by heaping teaspoonfuls onto ungreased cookie sheets.
Bake 10–12 minutes, until golden brown.
