Lentil-Stuffed Green Peppers
Yields 4 peppers
INGREDIENTS:
2 cups pasta sauce (jarred or homemade)
4 green bell peppers
1 recipe Lentils & Brown Rice
3 ounces mozzarella cheese (dairy or soy)
This vitamin C– and protein-packed entrée is a crowd pleaser with family members of all ages.
Preheat oven to 350°F.
Spread ⅓ of the pasta sauce in the bottom of 8″ × 8″ square pan.
Remove stems, seeds, and membranes from green peppers.
Stuff peppers with Lentils & Brown Rice mixture.
Top peppers with cheese.
Spread remainder of sauce over peppers.
Bake for 40 minutes.
Bell peppers are available in a rainbow of colors from green to red to purple. All bell peppers start out green, then change color as they mature. This change in color also indicates a sweeter bell pepper. They make a sweet and colorful addition to salads, stir-fries, and sauces.
