Guacamole
Yields 2 cups
INGREDIENTS:
2 avocados
½ medium onion
1 medium tomato
2 tablespoons cilantro
1 serrano pepper
1 tablespoon lime juice
Omit the serrano pepper for a more mild guacamole.
Slice open avocados, remove pit, and scrape out flesh. Mash avocado flesh with a potato masher or fork.
Finely chop onion, tomato, and cilantro.
Remove seeds from serrano pepper and finely mince.
Mix all ingredients.
Guacamole was invented by the Aztec people. It is believed that the higher-fat content of the avocado was an important part of the otherwise relatively low-fat Aztec diet. The mash that we know of today is surprisingly similar to what the Aztecs savored in their day.
