Grilled Summer Vegetables

Yields 2½ cups

INGREDIENTS:

1 head broccoli, trimmed into florets

1 yellow summer squash, sliced

3 fresh ripe tomatoes, cut into wedges

1 red onion, sliced

½ cup Italian dressing

¼ teaspoon sea salt

Grill vegetables on the top rack of the grill. Don't choose vegetables with a high water content, like cucumbers. They will not grill well. Stick to heartier vegetables and fruits to grill.

  • Combine all ingredients.

  • Wrap in aluminum foil.

  • Place on top rack of hot grill for 5–7 minutes or until vegetables tender.

  • Remove from heat and transfer to serving bowl.
