Grilled Summer Vegetables
Grill vegetables on the top rack of the grill. Don't choose vegetables with a high water content, like cucumbers. They will not grill well. Stick to heartier vegetables and fruits to grill.
INGREDIENTS | YIELDS 2½ cups
- 1 head broccoli, trimmed into florets
- 1 yellow summer squash, sliced
- 3 fresh ripe tomatoes, cut into wedges
- 1 red onion, sliced
- ½ cup Italian dressing
- ¼ teaspoon sea salt
Combine all ingredients.
Wrap in aluminum foil.
Place on top rack of hot grill for 5–7 minutes or until vegetables tender.
Remove from heat and transfer to serving bowl.
