Easy Spanish Rice
Yields 2½ cups
INGREDIENTS:
2 cups brown rice
½ cup shredded Cheddar cheese (dairy or soy)
1 cup salsa
This rice dish is simple but tasty. It is a quick way to make Spanish rice without a lot of prep work. Try it with your favorite salsa.
Cook brown rice according to directions.
Remove from heat and mix in cheese to melt.
Once melted, mix in salsa. Stir well.
Adding a prepared salsa, dip, or dressing is an easy way to add some kick to your rice. For your toddlers you can choose a very mild salsa to start. For the rest of the family, you can mix in a hotter salsa or add some hot sauce or fresh serrano or jalapeño peppers to increase the heat.
