Coconut Chocolate Chip Muffins
Yields 12 muffins
INGREDIENTS:
2 cups white whole-wheat flour
1½ teaspoons baking powder, divided
½ teaspoon salt
½ cup applesauce
½ cup flaxseed meal
¼ cup canola oil
¾ cup packed light brown sugar
¼ cup coconut milk
1 cup chocolate chips
¾ cup coconut flakes
With brown sugar and chocolate chips, these muffins are really a dessert. Unlike many desserts, however, they come with the benefit of whole-grain goodness.
Preheat oven to 350°F.
In a medium mixing bowl combine flour, 1 teaspoon baking powder, and salt.
In a large mixing bowl combine applesauce with ½ teaspoon baking powder.
Add flaxseed meal, canola oil, brown sugar, and coconut milk to the applesauce mixture.
Slowly add dry ingredients to wet. Stir to combine.
Stir in chocolate chips and coconut flakes.
Bake 25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
The name “coconut” comes from the Spanish word coco, meaning monkey's face. Early Spanish explorers thought the three indentations (or eyes) on the coconut resembled the face of a monkey.
