Citrus Fruit Salad
Pair this recipe with the Cinnamon Yogurt Fruit Dip. These two dishes together provide great sources of vitamin C and calcium. Jicama also provides a source of folic acid in this dish.
INGREDIENTS | YIELDS 5 cups
- 2 oranges, peeled and sliced
- 1 cup pineapple, sliced
- 1 cup blueberries
- ½ cup jicama, cut into matchsticks
- Shredded coconut
Combine oranges, pineapple, blueberries, and jicama together.
Top with shredded coconut to taste.
