This is a quick and easy dish that can be made for busy nights for dinner. Serve these burritos with a side of Easy Spanish Rice. Rice can be rolled into the burritos or served on the side.
INGREDIENTS | YIELDS 3 burritos
- 1 cup Black Bean & Carrot Mash
- 1 cup cooked and shredded chicken
- ¾ cup shredded Cheddar cheese
- 3 whole-wheat tortillas
- Salsa for garnish
In medium saucepan over medium heat, heat Black Bean & Carrot Mash, shredded chicken, and cheese until heated through.
Top each tortilla with ¾ cup of this mixture.
Roll up tortillas and top with salsa. Serve.
