Burritos

This is a quick and easy dish that can be made for busy nights for dinner. Serve these burritos with a side of Easy Spanish Rice. Rice can be rolled into the burritos or served on the side.

INGREDIENTS | YIELDS 3 burritos

  • 1 cup Black Bean & Carrot Mash
  • 1 cup cooked and shredded chicken
  • ¾ cup shredded Cheddar cheese
  • 3 whole-wheat tortillas
  • Salsa for garnish
  1. In medium saucepan over medium heat, heat Black Bean & Carrot Mash, shredded chicken, and cheese until heated through.

  2. Top each tortilla with ¾ cup of this mixture.

  3. Roll up tortillas and top with salsa. Serve.
