Avocado Summer Salad
This recipe works nicely with many different summer fruits. Experiment with a variety of berries to provide different sources of vitamins, minerals, and antioxidants.
INGREDIENTS | YIELDS 5 cups
- 2 ripe avocados
- 3 tablespoons fresh squeezed lime juice
- 2 fresh nectarines
- ¾ cup strawberries, diced
- ¼ cup sweet onion, diced
- Salt and ground black pepper to taste
Remove the pit from the avocados and slice into long strips. Arrange slices on a plate. Squeeze lime juice over the avocados to help maintain freshness.
Pit and dice the nectarines.
Mix together the nectarines, strawberries, and onion in a bowl.
Top avocados with the mixture of nectarines, strawberries, and onions.
Season with salt and pepper.
