Avocado Summer Salad

This recipe works nicely with many different summer fruits. Experiment with a variety of berries to provide different sources of vitamins, minerals, and antioxidants.

INGREDIENTS | YIELDS 5 cups

  • 2 ripe avocados
  • 3 tablespoons fresh squeezed lime juice
  • 2 fresh nectarines
  • ¾ cup strawberries, diced
  • ¼ cup sweet onion, diced
  • Salt and ground black pepper to taste
  1. Remove the pit from the avocados and slice into long strips. Arrange slices on a plate. Squeeze lime juice over the avocados to help maintain freshness.

  2. Pit and dice the nectarines.

  3. Mix together the nectarines, strawberries, and onion in a bowl.

  4. Top avocados with the mixture of nectarines, strawberries, and onions.

  5. Season with salt and pepper.
