Asparagus & Swiss Cheese Quiche
Yields a 9″ pie
1½ cups asparagus, trimmed and sliced into
1¾ cups grated Swiss cheese
1½ cups 2-percent milk
1 teaspoon salt
1 teaspoon paprika
½ teaspoon mustard
Any vegetables can be used in this recipe. It is also good with cooked breakfast meat. Make this with nitrate-free bacon and tomatoes or spinach and mushroom.
Preheat oven to 375°F.
Arrange sliced asparagus on bottom of pie pan.
Sprinkle Swiss cheese on top of asparagus.
In a small bowl, whisk eggs, milk, salt, paprika, and mustard together.
Pour over asparagus and cheese in pie pan. Bake for 30–40 minutes.
