Asparagus & Swiss Cheese Quiche

Yields a 9″ pie

INGREDIENTS:

1½ cups asparagus, trimmed and sliced into

¼″ sections

1¾ cups grated Swiss cheese

4 eggs

1½ cups 2-percent milk

1 teaspoon salt

1 teaspoon paprika

½ teaspoon mustard

Any vegetables can be used in this recipe. It is also good with cooked breakfast meat. Make this with nitrate-free bacon and tomatoes or spinach and mushroom.

  • Preheat oven to 375°F.

  • Arrange sliced asparagus on bottom of pie pan.

  • Sprinkle Swiss cheese on top of asparagus.

  • In a small bowl, whisk eggs, milk, salt, paprika, and mustard together.

  • Pour over asparagus and cheese in pie pan. Bake for 30–40 minutes.
