Lentils & Brown Rice

Frozen carrot slices work well in this dish if fresh aren't available.

INGREDIENTS | YIELDS 3 cups

  • 1 cup short-grain brown rice
  • 2¼ cups water
  • 2 medium carrots, peeled and thinly sliced
  • ½ cup dried lentils
  • ¼ teaspoon cumin
  • 1 bouillon cube (vegan, chicken, or beef)
  • 1 tablespoon olive oil
  1. Combine all ingredients in a medium saucepan.

  2. Bring to a boil.

  3. Reduce heat, cover pan, and simmer on low heat for 40 minutes.

  4. Turn off heat, let sit 5 minutes covered, then fluff and serve.
