Lentils & Brown Rice
Frozen carrot slices work well in this dish if fresh aren't available.
INGREDIENTS | YIELDS 3 cups
- 1 cup short-grain brown rice
- 2¼ cups water
- 2 medium carrots, peeled and thinly sliced
- ½ cup dried lentils
- ¼ teaspoon cumin
- 1 bouillon cube (vegan, chicken, or beef)
- 1 tablespoon olive oil
Combine all ingredients in a medium saucepan.
Bring to a boil.
Reduce heat, cover pan, and simmer on low heat for 40 minutes.
Turn off heat, let sit 5 minutes covered, then fluff and serve.
