Italian Beans & Barley
For convenience, canned garbanzo beans and canned tomatoes work well in this recipe. Drain and rinse beans if using canned, but do not drain tomatoes.
INGREDIENTS | YIELDS 5 cups
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 2 cups chopped green beans
- 2 cups cooked garbanzo beans
- 1 cup diced tomatoes
- 3 cups cooked barley
In a large skillet, heat olive oil over medium heat.
Add minced garlic to olive oil. Cook for 2–3 minutes, until garlic is golden and fragrant.
Add green beans, and cook for another 5 minutes.
Add remaining ingredients, combine, and heat through.
