Citrusy Rice Salad

Keep the extra dressing in a separate container to redress any leftover salad.

INGREDIENTS | YIELDS 3 cups

  • ¼ cup green beans
  • ¼ cup chopped orange pieces
  • ¼ cup pineapple chunks
  • 2 scallions
  • 2 cups cooked short-grain brown rice
  • ¼ cup orange juice
  • 1 teaspoon agave nectar
  • ¼ cup olive oil
  1. Steam green beans until tender. Plunge into cold water to stop cooking process.

  2. Cut fruit and beans into bite-sized pieces.

  3. Thinly slice white portion of scallion.

  4. Combine rice, fruit, and vegetables.

  5. In a jar with a tight-fitting lid, combine orange juice, agave nectar, and olive oil. Shake to combine.

  6. Toss salad with dressing to taste.
