Citrusy Rice Salad
Keep the extra dressing in a separate container to redress any leftover salad.
INGREDIENTS | YIELDS 3 cups
- ¼ cup green beans
- ¼ cup chopped orange pieces
- ¼ cup pineapple chunks
- 2 scallions
- 2 cups cooked short-grain brown rice
- ¼ cup orange juice
- 1 teaspoon agave nectar
- ¼ cup olive oil
Steam green beans until tender. Plunge into cold water to stop cooking process.
Cut fruit and beans into bite-sized pieces.
Thinly slice white portion of scallion.
Combine rice, fruit, and vegetables.
In a jar with a tight-fitting lid, combine orange juice, agave nectar, and olive oil. Shake to combine.
Toss salad with dressing to taste.
