Arroz Verde con Frijoles Negro

For a fun twist, serve this dish with warmed whole-grain tortillas instead of forks.

INGREDIENTS | YIELDS 6 cups

  • 5 cups vegetable broth, divided
  • 1 bay leaf
  • 2 cups short-grain brown rice
  • 1 bunch spinach
  • 2 tablespoons lemon juice
  • 2 garlic cloves
  • 2 cups cooked black beans
  • Pepper to taste
  1. In a large saucepan, bring 4½ cups vegetable broth, bay leaf, and rice to a boil.

  2. Reduce heat, cover, and simmer 40 minutes.

  3. While rice is cooking, thoroughly wash spinach and remove stems.

  4. Combine spinach, lemon juice, and garlic in food processor.

  5. Process into a paste adding extra vegetable broth when necessary.

  6. Remove bay leaf from rice, fluff with a fork, stir in drained and rinsed beans and spinach mixture.

  7. Add pepper to taste.
