Arroz Verde con Frijoles Negro
For a fun twist, serve this dish with warmed whole-grain tortillas instead of forks.
INGREDIENTS | YIELDS 6 cups
- 5 cups vegetable broth, divided
- 1 bay leaf
- 2 cups short-grain brown rice
- 1 bunch spinach
- 2 tablespoons lemon juice
- 2 garlic cloves
- 2 cups cooked black beans
- Pepper to taste
In a large saucepan, bring 4½ cups vegetable broth, bay leaf, and rice to a boil.
Reduce heat, cover, and simmer 40 minutes.
While rice is cooking, thoroughly wash spinach and remove stems.
Combine spinach, lemon juice, and garlic in food processor.
Process into a paste adding extra vegetable broth when necessary.
Remove bay leaf from rice, fluff with a fork, stir in drained and rinsed beans and spinach mixture.
Add pepper to taste.
