Two-Potato Mash
Yields 4 ounces
INGREDIENTS:
1 small Yukon Gold potato
⅛ cup water
½ teaspoon canola oil
4 tablespoons Sweet Potato Purée
Because Yukon Gold potatoes are so flavorful, it is the perfect potato to use for this dish, which doesn't contain any added salt.
Wash and peel potato and cut into small chunks.
In a small saucepan, bring potato and water to a boil. Cook until tender.
Transfer potato to a food processor or blender with oil. Purée.
Combine both potato purées.
