Spinach & Potato Purée
Fresh spinach holds a lot of dirt and sand. The best way to wash it is to submerge it in a bowl of cold water, drain, and repeat the process until the water remains clear.
INGREDIENTS | YIELDS ½ cup
- 1 small potato
- ¼ cup chopped spinach
- ⅛-¼ cup water
Wash, peel, and chop potato into small chunks.
In a small saucepan, combine potato, spinach, and water.
Bring to a boil, and cook until the potato is tender, approximately 5–10 minutes depending on the size of the chunks.
Transfer potato and spinach to a blender or food processor. Purée until smooth, adding as much reserved cooking water as necessary for age-appropriate consistency.
