Potato & Plum Purée
Different varieties of plums are ripe all throughout the summer, so take advantage of the luscious juiciness of this treat by mixing up some of this sweet and creamy dish.
INGREDIENTS | YIELD 6 tablespoons
- 1 small potato
- ⅛ cup water
- 1 small, ripe plum
Wash and peel potato and cut into small chunks.
In a small saucepan, bring potato and water to a boil. Cook until tender.
Peel plum, remove seed, and chop into chunks.
Combine fresh plum and cooked potato in food processor or blender. Purée until smooth.
