Chicken, Carrot, & Sweet Onion Mash

Sweet onions are a nice way to introduce your child to the flavor and health benefits of onions.

INGREDIENTS | YIELDS 2 cups

  • 6 cups water
  • 1 boneless, skinless chicken breast
  • ⅛ sweet onion
  • 2 carrots, peeled
  • 2 teaspoons olive oil
  1. In a large pot bring 6 cups of water to a boil.

  2. Preheat oven to 400°F.

  3. Add chicken and onion to water and boil until done, approximately 10 minutes. Once done, drain chicken and onions and save.

  4. Cut chicken into small pieces and allow to cool.

  5. Cut carrots lengthwise and then into small pieces, coat with olive oil, and roast in oven for 15–20 minutes.

  6. Combine chicken, onions, and carrots.

  7. Use a food processor or blender until desired consistency is reached. Use broth from cooking the chicken to reach an age-appropriate consistency. If consistency is too chunky, drain through a sieve and purée remaining liquid.
