Chicken, Banana, & Coconut
This is a great dish for grownups, too! Cook the adult portion in a separate pot so that you can spice it up. Options to spice it up for adults include adding some red chili paste, diced onions, coconut milk, curry powder, and fresh cilantro. Serve over brown or Arborio rice.
INGREDIENTS | YIELDS 2 cups
- 6 cups water
- 1 boneless, skinless chicken breast
- 1 small banana or ½ large banana
- 1 teaspoon coconut milk
In a large pot bring 6 cups of water to a boil. Place the chicken breast in the pot and boil until done, approximately 10 minutes. Once done, cut into small pieces and allow to cool.
Combine chicken, banana, and coconut milk. Use a food processor or blender until desired is consistency reached. Use broth from cooking the chicken, breast milk, or iron-fortified formula to reach an age-appropriate consistency. If consistency is too chunky, drain through a sieve and purée remaining liquid.
