Black Bean Mash
Yields 2 cups
INGREDIENTS:
1 cup dried black beans (or 1 (15-ounce) can of black beans)
3–4 cups water
1 tablespoon olive oil
Dried beans are extremely affordable, where canned beans are extremely convenient.
Soak dried beans in water for 6–8 hours or overnight before cooking. Drain soaking water from beans and rinse.
In a medium saucepan combine beans with water, and bring to a simmer with the lid tilted. Cook 1–1½ hours or until tender. Drain and rinse cooked beans (or drain and rinse canned beans, if using).
In a medium saucepan or sauté pan, heat olive oil over medium heat. Add beans and heat through for 1–2 minutes, or until desired temperature is reached. Remove from heat and mash beans with a potato masher or fork.
