Mango & Brown Rice

Yields 5 cups

INGREDIENTS:

2 cups cooked brown rice

2 mangos, chopped

1 tablespoon lime juice

For a twist to this recipe, cook the brown rice in coconut milk to give this dish more of an Asian influence and introduce your child to the flavor of coconut!

  • Combine cooked brown rice and chopped mangos.

  • Squeeze lime juice on top for flavor.
