Alphabet Noodle Soup

Yields 8 cups

INGREDIENTS:

Approximately 10 cups water (enough to cover chicken)

1 large broiler-fryer chicken

3–4 celery stalks, chopped

4–6 carrots, chopped

1 large onion

1–2 tomatoes

Salt and pepper

2 bay leaves

2 teaspoons chicken bouillon

1½ cups cooked alphabet noodles

As your children get older, use alphabet soup to help them learn the alphabet. Who ever said that eating can't be educational?

  • Bring water to a boil. Add chicken and return to a boil.

  • Once boiling, reduce heat immediately. Skim any fat from the top of soup.

  • Add remaining ingredients and simmer for 1½ hours.

  • Remove chicken and set aside. Remove all vegetables and discard bay leaf.

  • Strain soup and allow to cool. Once cool, skim off hardened fat.

  • Reheat soup and add cooked alphabet noodles.
