INGREDIENTS | YIELDS 2 yachts
- 1 zucchini
- 1 summer yellow squash, chopped
- ¼ red onion, chopped
- 1 ripe mango
- ½ cup finely chopped cilantro
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
Slice zucchini lengthwise to form 2 long boats.
Scrape out shallow middle of the zucchini to form the hull of the boat.
Combine yellow squash, onion, mango, and cilantro with red wine vinegar and olive oil until coated thoroughly.
Fill the zucchini boats with this mixture.
Serve on a slice of romaine lettuce for the “water.”
Hollowed out zucchinis make great vessels to hold different foods. Fill the zucchini with egg salad, chicken salad, or a fruit salad. Nutritionally, your children will get small amount of folate, potassium, vitamin A, and manganese when eating zucchini.
