Traditional Potato Salad

Combining sweet potatoes and russet potatoes is a nice twist to a familiar dish.

INGREDIENTS | YIELDS 6 cups

  • 4 russet potatoes
  • 2 sweet potatoes
  • 3 omega-3 fortified eggs
  • ½ cup of sweet green peas
  • 2 scallions, chopped
  • ½ cup light mayonnaise or vegenaise
  • 1 tablespoon yellow mustard
  • Sea salt and pepper to taste
  1. In a large saucepan, boil potatoes until soft. Once soft, remove from heat and cut potatoes into bite-sized pieces.

  2. In small pot, cover eggs with cold water and bring to boil. Cover and remove from heat for approximately 10 minutes. Remove from water, cool, and chop.

  3. Place eggs and potatoes in a large mixing bowl.

  4. Add peas, scallions, mayonnaise, and mustard and mix thoroughly.

  5. Salt and pepper to taste.

  6. Refrigerate until ready to serve.

Are Sweet Potatoes Really Potatoes?

No! There are more than 100 varieties of edible potatoes but the sweet potato is not one of them. These two root vegetables are completely different. The potato's scientific name is Solanum tuberosum and its relatives are tomatoes, eggplants, and peppers. The sweet potato's scientific name is Ipomoea batatas, which is in the bindweed, or morning glory, family. Sweet potatoes are more closely related to flowers that they are to a regular potato.
