Summer Barley Salad
The combination of steamed vegetable and sweet fruit brings a nice balance to this salad. You can substitute whatever is fresh at the farmers' market for this recipe.
INGREDIENTS | YIELDS 3 cups
- ½ cup green beans
- 2 scallions
- ½ cup strawberries, sliced
- 2 cups Basic Barley
- ½ cup red wine vinaigrette
Trim ends off green beans. Chop into 1″ pieces and steam until tender.
Finely chop white portion of scallions.
Toss all ingredients with the vinaigrette.
Chill before serving.
Red Wine Vinaigrette
Here is a simple recipe to make your own red wine vinaigrette. Combine the following ingredients in a tightly lidded jar: ¼ cup olive oil, ⅛ cup red wine vinegar, ⅛ cup lemon juice, and 1 tablespoon agave nectar. Shake before using.
