Summer Barley Salad

Yields 3 cups

INGREDIENTS:

½ cup green beans

2 scallions

½ cup strawberries, sliced

2 cups Basic Barley

½ cup red wine vinaigrette

The combination of steamed vegetable and sweet fruit brings a nice balance to this salad. You can substitute whatever is fresh at the farmers' market for this recipe.

  • Trim ends off green beans. Chop into 1″ pieces and steam until tender.

  • Finely chop white portion of scallions.

  • Toss all ingredients with the vinaigrette.

  • Chill before serving.

Red Wine Vinaigrette

Here is a simple recipe to make your own red wine vinaigrette. Combine the following ingredients in a tightly lidded jar: ¼ cup olive oil, ⅛ cup red wine vinegar, ⅛ cup lemon juice, and 1 tablespoon agave nectar. Shake before using.
