- 1½ cup rinsed quinoa
- 3 cups water
- 1 cup of frozen corn, thawed

- 3 tablespoons of flax oil
- 3 tablespoons olive oil
- 3 tablespoons rice wine vinegar

Place quinoa and water in a medium saucepan. Turn on medium heat and cook for 10–15 minutes or until all the water is absorbed. Fluff with fork.
Combine quinoa with remaining ingredients. Mix thoroughly, chill, and serve.
