Pork & Beans
Yields 6 cups
INGREDIENTS:
2 pounds boneless pork ribs
14 ounces beef broth
1 (12-ounce) can black beans, drained
12 ounces mild barbecue sauce, divided
Whole-wheat rolls
This can also be used as a side dish. Serve this recipe with fresh Fruit Salad, or the Mango Cole Slaw found.
In slow cooker, place pork ribs and beef broth. Cook on high for about 4 hours.
Once done, remove pork from cooker and shred it.
In small saucepan, heat black beans until heated through.
Mix pork with 6 ounces barbecue sauce and black beans.
Serve on whole-wheat rolls and top with desired amount of barbecue sauce.
Pork and beans does not have to be chopped hot dogs and pinto beans. Adding spices and vegetables such as roasted red peppers, tomatoes, green peppers, and onions can also give your pulled pork a little kick. This pulled pork–and-bean mixture can also be wrapped in corn tortillas and topped with shredded cabbage to make a nice pork taco.
