Orange Beets

How to boil your own beets: First, cut away the tops and 1″ of the stem. Wash the beets but do not peel them. Place in a pot with boiling water cook for 1½ to 2 hours. The skins slip off easily when done.

INGREDIENTS | YIELDS 4 cups

  • 1 package of peeled and steamed ready-to-eat baby beets
  • 1 can mandarin oranges
  • 1 fresh apple, cut into slices
  • ¼ cup canola oil
  • 3 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon orange peel zest
  1. Cut beets into small slices.

  2. In a large mixing bowl, combine beets with mandarin oranges and apple slices.

  3. In a small bowl, combine oil, orange juice, lemon juice, and orange zest.

  4. Toss dressing over fruit and chill. Serve.
