Hummus & Mango Sandwich
Yields 2 mini sandwiches
INGREDIENTS:
1 piece of whole-grain bread
1 tablespoon Hummus
⅛ cup mango slices
This creamy, sweet sandwich provides protein, fiber, iron, and vitamins A and C.
Spread hummus over the surface of the bread, and cut bread in half.
Top one half with mango slices.
Cover with other half.
Cut sandwich in 2 pieces.
When selecting a mango, two senses come into play to determine which fruit is best. First, smell the mango at the stem end. It should have a nice fruity aroma. Second, touch the mango. It should feel firm, yet yield to gentle pressure in the same way as a peach.
