Eggy Boats
Yields 25 boats
INGREDIENTS:
25 pea pods
6 hard-boiled free range eggs
¼ cup vegenaise or light mayonnaise
2 tablespoons butternut squash purée
½ cup black or green olive slices
Salt and pepper to taste
Egg yolks naturally contain vitamin D.
Wash pea pods and dry thoroughly.
Slice the top of the pea pod (the straight side) open to make “pea pod boats.”
Mash hard boiled eggs with a fork and mix with veganaise (or mayonnaise) and butternut squash.
Add salt and pepper to taste.
Spoon 1 tablespoon into each pea pod and top with olive slices as “lifesavers.”
Cover, chill, and serve.
