Eggy Boats

Yields 25 boats

INGREDIENTS:

25 pea pods

6 hard-boiled free range eggs

¼ cup vegenaise or light mayonnaise

2 tablespoons butternut squash purée

½ cup black or green olive slices

Salt and pepper to taste

Egg yolks naturally contain vitamin D.

  • Wash pea pods and dry thoroughly.

  • Slice the top of the pea pod (the straight side) open to make “pea pod boats.”

  • Mash hard boiled eggs with a fork and mix with veganaise (or mayonnaise) and butternut squash.

  • Add salt and pepper to taste.

  • Spoon 1 tablespoon into each pea pod and top with olive slices as “lifesavers.”

  • Cover, chill, and serve.
