Breakfast Burrito
Purées and mashes are not just for babies. Use purées to boost the nutritional value of your family's meals. Adding a purée is an excellent method to increase the nutrient density of your meals and snacks without the battles.
INGREDIENTS | YIELDS 1 burrito
- ¼ cup Black Bean and Carrot Mash
- 2 omega-3 fortified free-range eggs
- 1 tablespoon milk
- ¼ cup shredded cheese
- 1 whole wheat tortilla
- Salsa (for garnish)
In medium saucepan, heat Black Bean & Carrot Mash until hot.
In a small bowl, combine eggs and milk and whisk with fork.
In a skillet, add egg mixture and cheese and cook over medium heat until done.
Spread tortilla with a thin layer of Black Bean and Carrot Mash, top with scrambled eggs and cheese mixture.
Roll up tortilla and top with salsa. Serve.
