Breakfast Burrito

Yields 1 burrito

INGREDIENTS:

¼ cup Black Bean and Carrot Mash

2 omega-3 fortified free-range eggs

1 tablespoon milk

¼ cup shredded cheese

1 whole wheat tortilla

Salsa (for garnish)

Purées and mashes are not just for babies. Use purées to boost the nutritional value of your family's meals. Adding a purée is an excellent method to increase the nutrient density of your meals and snacks without the battles.

  • In medium saucepan, heat Black Bean & Carrot Mash until hot.

  • In a small bowl, combine eggs and milk and whisk with fork.

  • In a skillet, add egg mixture and cheese and cook over medium heat until done.

  • Spread tortilla with a thin layer of Black Bean and Carrot Mash, top with scrambled eggs and cheese mixture.

  • Roll up tortilla and top with salsa. Serve.
