Breakfast Burrito

Purées and mashes are not just for babies. Use purées to boost the nutritional value of your family's meals. Adding a purée is an excellent method to increase the nutrient density of your meals and snacks without the battles.

INGREDIENTS | YIELDS 1 burrito

  • ¼ cup Black Bean and Carrot Mash
  • 2 omega-3 fortified free-range eggs
  • 1 tablespoon milk
  • ¼ cup shredded cheese
  • 1 whole wheat tortilla
  • Salsa (for garnish)
  1. In medium saucepan, heat Black Bean & Carrot Mash until hot.

  2. In a small bowl, combine eggs and milk and whisk with fork.

  3. In a skillet, add egg mixture and cheese and cook over medium heat until done.

  4. Spread tortilla with a thin layer of Black Bean and Carrot Mash, top with scrambled eggs and cheese mixture.

  5. Roll up tortilla and top with salsa. Serve.
