Barbecue Meatloaf Muffins

Meatloaf without an egg? That's right, the flaxseed meal and water will thicken after 2–3 minutes and act as an egg replacer in this recipe.

INGREDIENTS | YIELDS 12 muffins

  • 1 tablespoon flaxseed meal
  • 3 tablespoons water
  • 1½ pounds 95-percent lean ground beef
  • 1 cup tomato juice
  • ¾ cup rolled oats
  • ¼ cup chopped onion
  • 2 garlic cloves, minced
  • 2 tablespoons oregano
  • 1½ cups barbecue sauce
  1. Mix flaxseed meal and water. Stir and allow to sit for 2–3 minutes.

  2. Preheat oven to 350°F.

  3. Combine beef, tomato juice, rolled oats, onion, garlic, and oregano. Add flaxseed mixture to the beef mixture and knead until well mixed.

  4. Portion out mixture into a regular-sized muffin tin. Top each muffin with 2 tablespoons barbecue sauce.

  5. Bake until muffins reach an internal temperature of 160°F.

Flaxseed Meal Can Replace Eggs
