Barbecue Meatloaf Muffins
Meatloaf without an egg? That's right, the flaxseed meal and water will thicken after 2–3 minutes and act as an egg replacer in this recipe.
INGREDIENTS | YIELDS 12 muffins
- 1 tablespoon flaxseed meal
- 3 tablespoons water
- 1½ pounds 95-percent lean ground beef
- 1 cup tomato juice
- ¾ cup rolled oats
- ¼ cup chopped onion
- 2 garlic cloves, minced
- 2 tablespoons oregano
- 1½ cups barbecue sauce
Mix flaxseed meal and water. Stir and allow to sit for 2–3 minutes.
Preheat oven to 350°F.
Combine beef, tomato juice, rolled oats, onion, garlic, and oregano. Add flaxseed mixture to the beef mixture and knead until well mixed.
Portion out mixture into a regular-sized muffin tin. Top each muffin with 2 tablespoons barbecue sauce.
Bake until muffins reach an internal temperature of 160°F.
