Turkey Tortellini Stir-Fry

It's easy to vary this recipe. Simply choose a different vegetable mix and stir-fry sauce. For example, use a peanut stir-fry sauce and use chopped peanuts instead of the cashews.

INGREDIENTS | SERVES 4

  • 1 9-ounce package refrigerated cheese-filled tortellini
  • 1 tablespoon peanut oil
  • 1 16-ounce package fresh-cut or frozen stir-fry vegetables (such as broccoli, pea pods, carrots, and water chestnuts)
  • 1–2 cups cooked turkey, chopped
  • ¾ cup stir-fry sauce
  • ½ cup dry-roasted cashews, chopped
  1. Cook the tortellini according to the package directions.

  2. Add the oil to a wok or large, deep skillet. Bring to temperature over medium-high heat. Add the vegetables and stir-fry for 3 to 5 minutes for fresh vegetables or 7 to 8 minutes for unthawed frozen vegetables, or until crisp-tender.

  3. Stir in the turkey and cook until it is warmed through. Add the stir-fry sauce and stir it in with the turkey-vegetable mix. Cook until the sauce is heated through.

  4. Add the cooked tortellini and toss gently to combine. Sprinkle with cashews and serve immediately.
