Warm Chicken Salad
You can increase this recipe to 8 servings by using all of the meat from the chicken and doubling the other ingredients.
INGREDIENTS | SERVES 4
- 2 medium oranges
- 6 cups torn romaine lettuce
- 1 medium red sweet pepper, seeded and diced
- ½ small red onion, halved and thinly sliced
- ½ cup slivered or sliced almonds, toasted
- Breast meat from a rotisserie chicken, cut into thin bite-sized strips
- ⅓ cup orange juice
- 1 tablespoon red wine vinegar
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon Dijon mustard
- OPTIONAL: coarsely ground black pepper to taste
Peel and section the oranges; cut each section into 4 pieces.
Add the orange pieces to a large salad bowl and toss them with the romaine, red pepper, onion, almonds, and chicken. Set aside.
Add the orange juice and vinegar to a microwave-safe bowl. Microwave on high for 1 minute, or until heated through. Whisk in the olive oil and mustard.
Pour the warm dressing over the salad and toss to mix. Season to taste with coarsely ground black pepper if desired. Serve immediately.
