Microwave Chicken and Rice
This is a microwaveable version of the Chicken Fried Rice recipe. You can enhance the flavor by adding some of the optional ingredients or by toasting the almond slices.
INGREDIENTS | SERVES 4
- 1 8.8-ounce microwaveable pouch brown or white rice
- 1 3-pound rotisserie chicken
- 1 tablespoon chicken broth or water
- 2 green onions, sliced
- ½ cup frozen peas
- ¼ cup bottled stir-fry sauce
- ¼ teaspoon toasted sesame oil
- OPTIONAL: soy sauce to taste
- OPTIONAL: honey to taste
- ¼ cup sliced almonds
Heat the rice pouch in the microwave according to package directions.
Remove and discard the skin and breast meat. Shred remaining meat.
Add the chicken to a covered microwave-safe bowl large enough to hold all of the ingredients; microwave at 70 percent power for 1 minute. Stir. Repeat until the chicken is brought to temperature.
Toss the rice, peas, stir-fry sauce, and broth or water with the chicken and microwave for 1 minute at 70 percent power. If the mixture is not sufficiently heated, repeat for 1 more minute. Top with the almonds.
