Salmon Soup
Smoked salmon will add another flavor dimension to this soup, but it is usually very salty. Therefore, either use reduced-sodium chicken broth or taste before you salt the soup to be sure that it needs it.
INGREDIENTS | SERVES 4
- 4 cups chicken broth
- 1 pound fresh or smoked salmon
- 1 medium yellow onion, thinly sliced
- Salt to taste
- ⅛ teaspoon freshly ground black pepper
- 1 bunch fresh spinach, well washed and chopped
Add the broth, salmon, onion, salt, and pepper to a 3-quart saucepan. Bring to a boil over high heat. Reduce the heat and simmer, covered, for 15 minutes.
Add the spinach, cover, and cook for another 5 minutes.
Smoked Salmon Alternatives
If you use fresh salmon in the Salmon Soup recipe but still want to add a smoky flavor to the dish, garnish each serving with some finely chopped crisp bacon. You can find smoked salmon everywhere from Costco to Whole Foods.
