Chocolate Oatmeal Pie

½ recipe Traditional Pie Crust (page 260)

⅓ cup butter

1-½ cups semisweet chocolate chips, divided

¾ cup brown sugar

¼ cup corn syrup

3 eggs

2 tablespoons flour

1 cup chopped walnuts

1 cup quick-cooking oatmeal

1. Preheat oven to 350°F. Do not prebake pie crust. In large saucepan, combine butter with ¾ cup of the chocolate chips, brown sugar, and corn syrup. Cook and stir over low heat until butter and chocolate chips melt. Remove from heat. Beat in eggs, one at a time, beating well after each addition.

2. Stir in flour, walnuts, oatmeal, and remaining ¾ cup of chocolate chips. Pour into prepared crust. Bake for 40 to 50 minutes or until pie is set and pie crust is golden brown. Cool for 45 minutes, then serve warm or cool.
