Chicken Cheese Pitas
SERVES 6
You can substitute any cheese you'd like in this simple recipe—any vegetable, too, for that matter. It's quick and delicious for an easy lunch.
1 tablespoon olive oil
3 boneless, skinless chicken breasts
1 green bell pepper, chopped
2 cloves garlic, minced
½ teaspoon salt
⅛ teaspoon cayenne pepper
1 cup diced Muenster cheese
¼ cup grated Parmesan cheese
2 tablespoons honey Dijon mustard
3 Pita Breads (page 41), cut in half
6 slices butter lettuce
