Beef and Hummus Pizza

This unusual pizza is delicious and good for you, too!

1 pound extra-lean ground beef

1 onion, chopped

1 (8-ounce) package sliced mushrooms

1 Homemade Pizza Crust (page 49), partially baked

1 cup Creamy and Crunchy

Hummus (page 32)

1-¼ cups shredded Monterey jack cheese

¼ cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

1. Preheat oven to 400°F. In heavy skillet, combine ground beef, onion, and mushrooms. Stir until ground beef is browned and vegetables are tender.

2. Place Pizza Crust on a cookie sheet and spread with Hummus. Top with ¼ cup cheese. Drain ground beef mixture thoroughly and sprinkle over pizza. Top with remaining Monterey jack and Parmesan cheeses.

3. Bake for 25 minutes, or until crust is golden brown and cheese is melted and brown. Sprinkle with parsley, let stand for 5 minutes, then slice to serve.
