Easy Huevos Rancheros
Serve with a side of Extra-Special Frijoles Refritos.
INGREDIENTS | SERVES 4
- 1 avocado
- 1 tablespoon vegetable oil
- 4 eggs
- 4 Corn Tortillas
- 1 cup Tomato Salsa
Peel the avocado and remove the pit. Slice the fruit into ½-inch-thick slices.
Heat the oil to medium temperature in a medium-sized frying pan. Add the eggs. Fry to your liking.
Remove the eggs and put the tortillas in the frying pan. Fry for 30 seconds on each side.
Place 1 egg on top of each flattened tortilla. Cover the egg with salsa. Garnish with avocado slices.
