Easy Huevos Rancheros

Serve with a side of Extra-Special Frijoles Refritos.

INGREDIENTS | SERVES 4

  1. Peel the avocado and remove the pit. Slice the fruit into ½-inch-thick slices.

  2. Heat the oil to medium temperature in a medium-sized frying pan. Add the eggs. Fry to your liking.

  3. Remove the eggs and put the tortillas in the frying pan. Fry for 30 seconds on each side.

  4. Place 1 egg on top of each flattened tortilla. Cover the egg with salsa. Garnish with avocado slices.
