Steamed Broccoli

Serves 6

If you will not be serving this dish immediately, shock the broccoli in ice water after steaming to stop the cooking process.

3 heads broccoli

2 cups water

  • Peel the stems and stalks of the broccoli with a vegetable peeler. Cut the broccoli heads and stems in half lengthwise.

  • In a steamer pot, heat the water to boiling. Place the broccoli in pan, set it over the pot, and cook until al dente. Drain and serve.

Steamers

While steamer pot/pans are ideal, they are not essential. You can use a metal colander or strainer in a pot with a lid for steaming vegetables or fish. It is even a better idea to quickly boil any green vegetables and shock it in ice water. This helps to retain the “greenness.”
