Lemon Sole with Capers
If you are searching for something to serve with this dish, consider crème fraîche; it makes for a very nice accompaniment.
3 cloves garlic
3 sprigs fresh dill, leaves only
1½ pounds sole
Fresh-cracked black pepper, to taste
1 teaspoon fresh-grated lemon zest
1 teaspoon olive oil
½ teaspoon capers
Preheat oven broiler. Mince the garlic and chop the dill.
Place the sole on a broiler pan; sprinkle with pepper, zest, and garlic, and drizzle with the oil. Place under broiler for 3 minutes, then turn carefully and broil for 1 minute longer.
Remove from broiler and top with dill and capers.
