Yields ½ cup

This recipe is a nice side with any spicy dish.

1 European cucumber

Zest and juice of 1 lime

1 teaspoon honey

1 teaspoon vinegar

Peel and dice the cucumber. Mix together all the ingredients, and chill.

Difference in Cucumbers

The main difference between European cucumbers and regular cucumbers is that European cucumbers have no seeds. They also taste a bit sweeter. To substitute regular cucumbers for European, simply remove the seeds.
