Sour Papaya Stew

Yields 1 cup

While this isn't a stew in the traditional sense, its method of preparation is like a stew, thus the name.

1 papaya

1 jalapeño pepper

2 scallions

¼ bunch cilantro (to yield 2 tablespoons)

Juice of 1 pink grapefruit

¼ cup white wine (Pinot Grigio or Sauvignon Blanc)

  • Dice the papaya. Remove seeds and stem from jalapeño, then mince. Chop the scallions and cilantro.

  • Simmer the fruit, pepper, juice, and wine over medium heat for 10 minutes.

  • Remove from heat and add the scallions and cilantro; serve.
