Sour Papaya Stew
Yields 1 cup
While this isn't a stew in the traditional sense, its method of preparation is like a stew, thus the name.
1 papaya
1 jalapeño pepper
2 scallions
¼ bunch cilantro (to yield 2 tablespoons)
Juice of 1 pink grapefruit
¼ cup white wine (Pinot Grigio or Sauvignon Blanc)
Dice the papaya. Remove seeds and stem from jalapeño, then mince. Chop the scallions and cilantro.
Simmer the fruit, pepper, juice, and wine over medium heat for 10 minutes.
Remove from heat and add the scallions and cilantro; serve.
