Apple Chutney
Yields 1 pint
Try this as a side for pork dishes instead of applesauce. It also is wonderful with hearty winter squash.
2 cups ice water
1 tablespoon fresh lemon juice
3 Granny Smith apples
1 shallot
3 sprigs fresh mint
1 tablespoon fresh-grated lemon zest
¼ cup white raisins
½ teaspoon ground cinnamon
Combine the water and lemon juice in a large mixing bowl. Core and dice the unpeeled apples and place them in the lemon water.
Thinly slice the shallot and chop the mint.
Thoroughly drain the apples, then mix together all the ingredients in a medium-size bowl.
