Apple Chutney

Yields 1 pint

Try this as a side for pork dishes instead of applesauce. It also is wonderful with hearty winter squash.

2 cups ice water

1 tablespoon fresh lemon juice

3 Granny Smith apples

1 shallot

3 sprigs fresh mint

1 tablespoon fresh-grated lemon zest

¼ cup white raisins

½ teaspoon ground cinnamon

  • Combine the water and lemon juice in a large mixing bowl. Core and dice the unpeeled apples and place them in the lemon water.

  • Thinly slice the shallot and chop the mint.

  • Thoroughly drain the apples, then mix together all the ingredients in a medium-size bowl.
